Crémant de Limoux is one of France's best kept secrets. The monks of Saint-Hilaire Abbey, near Limoux, created the winemaking method for sparkling wines in 1531. Then, Dom Pérignon visited them and learned their tricks, later returning to Champagne to perfect it. 50% Chardonnay, 40% Chenin Blanc and 10% Mauzac, Cuvée Eugenie spends a year on its lees and offers big aromas of preserved citrus and brioche. So pleasantly fool your birthday guests this year — forgo the Champagne, and serve the Limoux!
