Based on the Melon de Bourgogne grape, the Muscadet appellation pumps-out a ton of wine. You have to seek-out the top producers to get the good stuff, like Domaine L'Ecu whose early embrace of natural viticulture (since the 1970s), terroir-specific bottlings, and extended lees ageing have masterfully influenced the region as we know it today. Certified biodynamic, this "Granite" bottling comes from 40+ year-old vines, on granite soils, made with natural yeasts, and no filtration. Chablis-like, it's a party of minerality in the glass. Drink by itself or anything from the sea.
