But what’s impressed me, even more, is his smaller label, André Pasdeloup, named after his grandfather. I met Arnaud last year when he stopped by Vinya, and I told him how much I loved his Pasdeloup Mercurey Rouge, which we’ll pour by-the-glass until it runs out. And now there’s this new hot arrival: Pasedeloup, Chablis edition. Sure, it’s not estate bottled, and the fruit makes the trip from Chablis to Beaune for vinification, but in the glass, it makes me happy with its lemon cream and Parmesan tang and loads of chalky crunch. With its minimalist black-and-white label and handsome gold wax capsule, it looks far more expensive than it is. It's affordable luxury, Burgundy style.
