Rosado of Listán Negro by Dolores Cabrera Fernández | 2019
A passionate organic farmer, Dolores left her position as head viticulturist at Bodegas Monje (after 10 years) to pursue her own winery, naming her project “La Araucaria” for the type of evergreen tree found in the Canary Islands. Dark as cough syrup, this rosado is made from centenarian vines which grow in the traditional cordón trenzado (braided cord) style. A 12-hour skin maceration breeds its "dark as cough syrup" color, but don't be fooled by the sight! There's nothing dark or syrupy about this wine. It's a starburst of wild berries on the nose with a wild, Rhône-like garrigue on the palate. Instead of a rosé, think of this wine as a chillable red, and you'll instantly fall for Dolores Cabrera and the wine magic of the Canary Islands.
