When talking about Loire Cabernet Franc, the Chinon and Saumur-Champigny appellations are more popular than Saint-Nicolas de Bourgueil, but in Paris, these are the essential bistro wines. So much so, that they've earned the nickname La Redemande: wines so good, that you order them again and again! The soils in Saint-Nicolas are very sandy, which give this Cabernet Franc sky-high aromatics and an irresistible bounce on the palate. Put a chill on it and drink with the classics, like steak tartare, salade verte, and terrine de campagne.
