In the small commune of Bué, just outside of Sancerre, François Crochet and his wife farm 25 acres of vineyards rich with chalk, flint, and gravelly marl. If you like ultra pure, mineral-driven expression of Sauvignon Blanc, then this will be your new warm weather friend. This "Les Perrois" bottling (the flagship of the estate) refreshes the palate with big lemon-lime citrus, sweet fennel, and icy-cold minerals. Serve with arugula and goat cheese salads, ceviche, or salt-crusted fish at 46-50 (F) in an all-purpose white wine glass.
