Savigny-lès-Beaune by Pavelot | 2017
It seems like no matter where I go, I take Domaine Pavelot with me. The Pavelots have been cultivating vines in Savigny-lès-Beaune since the French revolution and make some of the most underrated wines south of the hill of Corton. Located in a mostly red wine appellation, their red wines are deliciously classic and pure, but it's their whites which "turn it up a notch" and flirt with perfection.
95% Chardonnay with a smidge of Pinot Blanc, half of the vines in this bottle date back to 1947! From two climats, one limestone heavy, the other more sandy, the wine follows a meticulous recipe in the cellar: 6-8 weeks fermentation in barrel and demi-muids, followed by 12 months aging in barrel (25% new), then racked and blended in tank, and bottled unfined with light filtration. If you close your eyes and take a sip, you'll guess you're in Meursault. The nose pops with cold pear and apple, followed by creamy key lime and the golden parts of the crust. On the palate it stays lean and tart, and the softest hint of oak, sweetens the extra long finish. A stunning white Burgundy, to say the least, from a special place "up the road," called Savigny-lès-Beaune.
