Like its name implies, Supernova represents a bright new wave of farmers and winemakers dedicated to preserving Mallorca’s indigenous grape varieties. The force behind Ca’n Verdura is Thomas Llabrés who founded his micro-winery in 2012 in a former auto garage in the heart of Binissalem, an ancient village in the northern central zone of the island. Using low-impact farming and low-intervention winemaking, he has brought grapes such as, Mantonegro, Callet, Giró Ros, and Callet back to the forefront, rightly stealing the spotlight from decades of luxuriously planted, international varietals.

Supernova Blanc is Thomas’ top white wine, made from 100% Moll, with some of its pedigree dating back to a 1958 vineyard. Sourced from multiple sites, a terroir of limestone, iron-rich clays, and rounded stones gives the wine a rich mouthful of minerality bounded by Moll’s crisp and fennel-y acidity. More neutral than aromatic, the 2021 Supernova Blanc reminds me of a premier Bourgogne Aligoté with its lemon-pear fruits, hidden flowers, and sweet exotic herbs. On the palate, it seamlessly floats from creamy to lean, mineral to fruity, and medium to light. I ask myself, "How can a white wine from a warm place be this good?" I'm not really sure, but I do know that Thomas Llabrés has some serious winemaking super powers. So, hurry-up and catch this delicious Supernova, and experience a star in the making.  ~AA
