Think of natural wine like an acoustic version of a song. Sometimes the acoustic versions are better, raw and beautiful, and sometimes they’re not (unfamiliar and weird). But when you hear the good ones, they stick, like a perfectly silky Gamay from Beaujolais or a sheer and crystalline-like Sauvignon Blanc from Sancerre. Nature matters.
