A collaboration project between Loire Valley winemaker Pascal Biotteau and American wine pro Mary Taylor, I forgot about how much I liked this wine, until last week, when I opened a few bottles for a private tasting. It had been nine months since I tasted this 2019, and "Wow!" what a difference time makes when you're Chenin Blanc. Like a plain donut getting a dollop of cream in the middle, the wine oozes with sweet pear, golden apple, wet stone, and cracks of Bit-o-Honey. The finish is juicy, bone dry, and mildly salty, which will surely have you reaching for another glass, and for this price, that's a very good thing!
