Arnaud Baillot’s namesake négociant label has become something of a mini phenomenon in South Florida. It’s built by serious pedigree and access—as his wife’s family is the legendary Domaine Hudelot-Noëllat in Chambolle-Musigny. But what’s impressed me more, recently, is his smaller label, André Pasdeloup, named after his grandfather. I met Arnaud last year at Vinya and told him how much I loved his Pasdeloup Mercurey Rouge, which we’ve been pouring by the glass for almost a year. And now there’s this hot new arrival: his Pasedeloup, Chablis edition. Sure, it’s not estate bottled, and the fruit makes the trip from Chablis to Beaune for vinification, but in the glass, it makes me happy with its lemon cream and Parmesan tang, followed by loads of chalky crunch. With its minimalist black-and-white label and handsome gold wax capsule, it looks far more expensive than it is: Affordable luxury, Burgundy style. And who doesn’t want that? ~Allegra Angelo
