Using 20% reserve wines, winemaker Pierre Amillet prefers a combination of used oak and stainless-steel to encourage subtle notes of golden nuts and honey, while preserving laser-like freshness. With a dosage close to zero, this Extra Brut style piles on layers of cold and icy minerality, together packed into a bone-dry, lip-smacking finish.
