Vincent Dauvissat Chablis Premier Cru Vaillons | 2023

You can read oodles of quotes and tasting notes about Dauvissat’s 2023 Vaillons, but my favorite is a simple saying from MW Christy Canterbury (I love her), calling the wine, “Very Dauvissat, very stylish.” So, instead of four bottles, we now have three. Christy made me do it. Easily one of the most sublime wines on the planet, every drop is worth the hype. Lime crunch, rainbow crystals, everything bagel, rock supreme—this is as good as it gets.
