Distilled at Caol Ila (Gaelic for Sound of Ilay) in May of 2008, aged 9 years, and bottled in April of 2017, this is a product of Signatory's "Un-Chillfiltered Collection," which means the naturally occurring fats and oils in the malt remain (they were not filtered-out). Thus, you might notice some cloudiness in your bottle, and that's a good thing — less filtration equals more texture and flavor! On the nose, the whisky woos the senses with oolong tea, coastal pines, vanilla, and walnut. on the palate, it's milky and soft with dried tropical fruits and poofs of smoke.
