A Florida exclusive and Vinya fan favorite, we can never have too much of Bethier's limited Les Chasseignes bottling. A common phrase in Sancerre, 'Les Chasseignes' refers to a vineyard with limestone subsoils covered with smooth stones. Berthier’s expression comes from the northern fringe of the Sancerre appellation in an area called, Sury-en-Vaux or Smile of the Valley. Here, drier conditions and slightly warmer temperatures make this area an oasis for decadent, mineral-driven Sauvignon Blanc. Aged in a combination of stainless-steel tank and neutral 450L-600L barrels, Sauvignon's sharp green edges morph into lush and savory ones — notes of fennel, minty herbs, and licorice. On the palate, Les Chasseignes is a terroir lover’s dream with icicles of stone and yellow crystals. Technically bone dry, but deceivingly salty and sweet, Clément and Florian Berthier remind us that top quality Sancerre can be as thrilling as a Premier Cru Chablis or a Grand Cru German Riesling.
