One of Spain's most historical and unusual white wines, Monopole is the country's oldest white wine brand, produced since 1915. After 40 years, the winery has resurrected the Clásico label, and the wine is made just like it was in the 1970s. 100% Viura, the wine is racked into old barrels with different capacities (300-500L) after fermentation. Here, the wine rests for 8 months, and during that time, some of the barrels develop a veil of flor yeasts, similar to the phenomena that takes place in Jerez Fino and Vin Jaune of the Jura. As a result, the wine in the glass attracts all the senses with quiet notes of cream, chamomile, and toasted almond. Unlike Vin Jaune or Fino, though, Monopole Clásico is much prettier, more Chablis-like, with the perfect touch of mystery and exotic. ~Allegra A
