First made in 1988, Pur Sang is primarily sourced from the La Folie vineyard, north of Dagueneau's home village of Saint-Andelain. Unlike the iconic "Silex" cuvée, Pur Sang's soils lack silex, in favor of clay and limestone. Farmed biodynamically, the wine is aged extensively on its lees in a mix of 450L and 600L barrels, along with Didier’s custom-made 350L cigar barrels, marked by their elongated shape. Arguably the estate’s most popular cuvée, the 2019 is a richly textured Sauvignon Blanc which benefits from decanting to uncurl all its layers of lime blossom, tart peaches, ivory bulbs, and crystallized citron. On the palate it’s supremely textured, dense with icy minerals, yet deceptively buoyant.
