Made by spontaneous fermentation and aged on its lees for several months, Parajes del Valle shows off the serious side of Bobal. In the glass it's a spiral of crushed berries, Mediterranean garrigue, and cool spice. Overwhelmingly juicy and chillingly bone-dry, this is one of Spain's best pink wines. ~Allegra A
