Made by Champagne superstar Rodolphe Péters (of Pierre Péters), Racines is making some of the best sparkling wine beyond France. Powered by Etienne de Montille and Brian Sieve of Burgundy, along with Justin Willet of Santa Barbara, and Rodolphe, California's magnificent Pacific-influenced terroir is on full display with acid sharp freshness and buoyant minerality. Sourced from the Wenzlau Family Vineyard, Sanford & Benedict Vineyard and Bentrock Vineyard, the wine is aged for an impressive 30-months on the lees and bottled with a low dosage which qualifies the wine as "Extra Brut." On the palate, warm biscuit and preserved yellow citrus unfold into suggestions of wild mushroom and sweet salt.
