Dating back to the 17th century, Ramato is a traditional winemaking practice from Northern Italy synonymous with Pinot Grigio. When Pinot Grigio ripens, its skins turn a pink-grey color which is a sign of quality. Instead of separating the juice quickly from its skins, Ramato intentionally keeps the skins and the juice together, typically for several hours or for two-three days. Locals don't consider this an orange wine, and they don't consider it Rosé, it's just Ramato! In the glass, a luscious copper hue unfolds into ripe pear, almond, and white cherry. There's more flesh to the wine on the palate, than a stereotypical Pinot Grigio, which makes it an excellent pairing for meaty types of fish and leaner types of meat. Growing in popularity over the last fifteen years, there are many Ramato wines available on the market including some excellent new-wave styles from Oregon and Northern California. When it comes to the classics, though, Scarbolo continues to produce one of the best in Italy.  Every year, with every release, it simply gets more delicious. ~Allegra A
